I've gone and caught myself a cold. I'd like to blame my good friend and band mate Jon, but I wouldn't do that... This soup is super easy and a great way to use up the CSA veg before we get another box! I added Dandelion Greens to the soup for added nutrients and protein, yeah protein! I just learned that today.
Kill the Flu Soup
Gather all ingredients and get yourself a chopping board and sharp chef's knife!
Prep: Chop onion, peel & chop carrots & sweet potatoes
Saute in a bit of olive oil on med heat until caramelized
1 yellow onion
5 rainbow carrots (normally you would add celery to the mirepoix but I didn't have any!)
Prep: Mince garlic & ginger while that's cooking...
Reduce heat and add
1 Tbsp ginger
6 cloves of garlic
Sautee for a minute or two then add
2 cartons (64 oz) organic chicken stock
2 sweet potatoes
5 sprigs fresh thyme
Bring to a boil
Prep: Clean & chop dandelion greens, clean brussells sprouts & cut off stems, outer leaves and thinly slice
Season the soup (I also added a pinch of cayenne pepper) and test the vegetables for tenderness, when ready add
1 c dandelion greens
8 or so brussels sprouts
Cook until just bright green then serve
Now, we had just bought some Llano Seco Argentine Sausage at the farmer's market yesterday so I HAD to add it to the soup... I sliced 2 sausages and browned them a little (and got some of the fat out!) then added to the soup with the greens, yum... gave it another spicy kick. Good to sweat when you're sick right?
