My husband and I went to the farmer's market last weekend and found a few new vegetables to try & grabbed the last 2 pork chops from Llano Seco Rancho (yum!). The lighting is shifting and the days are getting shorter. I feel energized as Fall approaches! The harvesting is winding down (no more dust!) and I'm ready to start cooking some heartier roasty dishes. Note, my first time cooking kholrabi... it was delicious!!
Get Some Color On Your Veg
Cut up veggies (sweet potatoes, squash, kholrabi - endless options at the market)
Toss with olive oil
Place on sheet with parchment and roast the vegetables for about 20 mins. Turn 1/2 way through. After 20 check for tenderness & color. Veg Candy ;)
