I'm heading to Tahoe this weekend with my daughters & family to go snow shoeing, weather permitting... which means Rick is in charge of feeding himself... he is kichen phobic. To inspire him this morning I made some fancy eggs with last night's dinner thrown in with some tomato sauce I canned last Summer. The dish has a name, thank you Celia, Shakshuka!! I shall call it Shakshuka with Leftovers ;)
The rest of my morning I will spend making soup & try to throw together some Whole30 friendly meals for Rick when he stumbles into the house in a code stupor for food!
SHAKSHUKA WITH LEFTOVERS
This is really easy...
Add a little olive oil in the skillet (med heat), when hot add your leftovers (turkey, roasted tomatoes & kale) and some tomato sauce... when hot, crack 2 eggs in the center and cover so that the eggs steam. When the whites are cooked, remove - season - eat!
